Super Cobb with Green Goddess Dressing

I find green goddess dressing to have an incredibly indulgent taste, especially on a salad as savory as a cobb. If you’re near a Trader Joe’s, they sell a great one made with all-natural ingredients.

MAKES: 1 serving TOTAL TIME: 30 minutes

3 slices bacon

2 eggs

6 ounces boneless, skinless chicken breast

salt, to taste

pepper, to taste

2 tablespoons mayonnaise

2 tablespoons plain Greek yogurt

1/3 teaspoon anchovy paste

½ small clove garlic, chopped

2 tablespoons chopped fresh parsley

2 teaspoons chopped fresh tarragon

½ tablespoon chopped chives

1 teaspoon lemon juice

3 cups romaine lettuce

½ cup halved cherry tomatoes

½ cup diced cucumber

¼ cup sliced red onion

¼ cup crumbled blue cheese

½ avocado, peeled, pitted, and sliced
